Ingredients
1 pound boneless, skinless chicken breast, thinly sliced
Marinade:
1 large egg
1 cup milk, or buttermilk
¼ cup dill pickle juice
Breading:
1¼ cups all-purpose flour
2 tablespoons powdered sugar
2 teaspoons kosher salt
1 teaspoon black pepper
For Serving:
24 mini slider rolls
4 tablespoons unsalted butter, melted
½ cup honey, for drizzling
Directions
Marinate: Cut the chicken into 1-inch pieces. In a large bowl, whisk together the milk, egg, and dill pickle juice. Add the chicken, coat well, and marinate at least 30 minutes (or overnight, refrigerated).
Preheat the air fryer to 400°F (200°C) for 3–5 minutes. In a shallow dish, stir together the flour, powdered sugar, salt, and pepper.
Remove the chicken from the marinade, letting excess drip off. Dredge each piece in the flour mixture, pressing gently to coat all sides.
Place the chicken in a single layer in the air fryer basket. Cook 8–10 minutes, flipping halfway, until golden and cooked through (165°F internal temperature).
Split the slider rolls, brush the cut sides with melted butter, and toast in the air fryer 1–2 minutes until golden.
Place a piece of chicken on each roll bottom, drizzle lightly with honey, and add the top.
Arrange on a platter and serve warm with your favorite dipping sauces.
