CopyCat Golden Corral Banana Nut Bread
Ingredients
3 ripe bananas, mashed
1 ½ cups all-purpose flour
½ cup granulated sugar
½ cup packed brown sugar
2 large eggs
½ cup unsalted butter, melted
1 teaspoon baking soda
¼ teaspoon salt
1 teaspoon vanilla extract
1/2 cup chopped walnuts , or pecans
Directions
Preheat oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan or line with parchment paper.
Mash bananas in a large bowl until smooth.
Mix in melted butter, eggs, brown sugar, granulated sugar, and vanilla extract. Whisk until combined.
Stir in flour, baking soda, and salt. Mix gently until just combined.
Gently fold in chopped walnuts or pecans.
Pour batter into prepared loaf pan and smooth the top.
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Cover with foil if the top browns too quickly.
Cool: Let bread cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
