CopyCat Olive Garden Salmon Bruschetta

Ingredients

2 salmon fillets
1 cup cherry tomatoes, diced
1/4 cup fresh basil, chopped
2 cloves garlic, minced
2 tablespoons balsamic glaze
1 tablespoon olive oil
Salt and pepper to taste

Directions

In a bowl, combine the diced cherry tomatoes, chopped basil, and minced garlic. Season with salt and pepper to taste. Stir in the olive oil and set aside.

Preheat your air fryer to 400°F (200°C).

Season the salmon fillets with salt and pepper on both sides. Optionally, brush with a bit of olive oil to prevent sticking.

Place the salmon fillets in the air fryer basket, skin-side down. Air fry at 400°F for 8-10 minutes, or until the salmon flakes easily with a fork.

Once the salmon is cooked, place each fillet on a plate. Spoon the prepared tomato-basil mixture generously over the top of the salmon.

Drizzle balsamic glaze over the bruschetta topping for a tangy and sweet finish.

Serve immediately with your favorite side dish, like roasted vegetables or a light salad.
