CopyCat Outback Steakhouse Air Fryer Spicy Jammin’ Meatloaf

Ingredients

Meatloaf:
1 pound ground beef, preferably 80/20 mix
1/2 pound ground pork
1 small onion, finely chopped
1 large egg
1/2 cup breadcrumbs
1/4 cup milk
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper, adjust to taste
Salt and black pepper, to taste

Spicy Jam Glaze:
1/2 cup ketchup
1/4 cup brown sugar
2 tablespoons apple cider vinegar
1 tablespoon hot sauce, adjust to taste
1 teaspoon smoked paprika

Directions

In a large bowl, combine ground beef, ground pork, chopped onion, egg, breadcrumbs, milk, ketchup, Worcestershire sauce, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper. Mix until just combined, being careful not to over mix.

Form the mixture into a loaf shape that will fit in your air fryer basket. If necessary, you can make two smaller loaves.

Preheat your air fryer to 360°F (182°C).

Place the meatloaf in the air fryer basket. Air fry for about 25-30 minutes, or until the internal temperature reaches 160°F (71°C).

While the meatloaf is cooking, mix together ketchup, brown sugar, apple cider vinegar, hot sauce, and smoked paprika in a small bowl.

In the last 10 minutes of cooking, generously brush the top of the meatloaf with the spicy jam glaze. Continue to cook until the glaze is sticky and caramelized.

Once cooked, let the meatloaf rest for a few minutes before slicing. This helps retain its juices. Serve slices of the meatloaf with additional glaze on the side, if desired
