CopyCat Panera Bread Air Fryer Wild Blueberry Muffins

Ingredients

Muffin Ingredients:
1 1/2 cup all-purpose flour
3/4 cup granulated sugar
2 teaspoon baking powder
2 teaspoon salt
1/3 cup vegetable oil
1 large egg
2 teaspoons vanilla extract
2/3 cup buttermilk
1 cup frozen wild blueberries

Streusel Topping:
1/3 cup raw sugar
1/3 cup all-purpose flour
4 tablespoons butter (cold)

Directions

In a large mixing bowl, mix the 1 1/2 cup all-purpose flour 3/4 cup granulated sugar 2 teaspoon baking powder, and 2 teaspoon salt, and mix well.

In another mixing bowl, mix the 1/3 cup vegetable oil 1 large egg, 2 teaspoons vanilla extract and 2/3 cup buttermilk.

Then mix the wet ingredients into the dry ingredients, mix well.

Fold in the 1 cup frozen wild blueberries, mix well.

Spray your muffin tin with cooking spray or line with muffin liners.

Spoon the batter into the muffin cavity, filling about 2/3 way full.

Spoon a couple of tablespoons of topping on each muffin.

Set the muffin tin into the air fryer basket, set the temperature to 320 degrees F for 12-15 minutes.

Let slightly cool before serving.

Topping Instructions:
In a small mixing bowl, mix the 1/3 cup raw sugar, 1/3 cup all-purpose flour and 4 tablespoons butter (cold). Mix until it’s crumbly.
