CopyCat Starbucks Air Fryer Vanilla Bean Scones

Ingredients

Scones:
2 cups all-purpose flour
1/3 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 cup unsalted butter, cold and diced
1/2 cup heavy whipping cream, cold
2 teaspoons pure vanilla extract

Vanilla Bean Glaze:
1 cup powdered sugar
1 vanilla bean, scraped (or 1 tsp vanilla bean paste)
1 1/2 tablespoons milk

Directions

In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold diced butter and cut it in with a pastry cutter or fork until the mixture resembles coarse crumbs.

In a small bowl, stir together the cold heavy cream and vanilla extract. Pour into the dry mixture and stir until just combined — do not over mix.

Turn the dough out onto a lightly floured surface and pat into a circle about 1/2 inch thick. Cut into 8 equal triangles and place on a lightly greased air fryer tray or basket, leaving space between each.

Air fry at 330°F (165°C) for 10–12 minutes, until the scones are golden brown. (Optional: brush the tops with a little heavy cream before air frying for extra color.)

While the scones cool slightly, whisk together the powdered sugar, scraped vanilla bean seeds, and milk until smooth. Drizzle over the warm scones and let the glaze set before serving.
