Ingredients
2 slices sourdough bread
1 large avocado
1 teaspoon lemon juice, freshly squeezed
1 teaspoon salt, to taste
1/2 teaspoon black pepper, to taste
1/4 cup Cherry tomatoes, halved, optional
1/4 teaspoon Olive oil, for drizzling
1/4 cup Microgreens or arugula, for garnish, optional
1/4 teaspoon red pepper flakes, or poached egg, optional
Directions
Toast your sourdough slices until they’re golden and crispy. You can use a toaster, oven, or air fryer (375°F for 4–5 minutes).
In a small bowl, mash the avocado with lemon juice, salt, and pepper until smooth but still slightly chunky.
Spread a generous layer of mashed avocado over each slice of toasted bread.
Top with halved cherry tomatoes, a drizzle of olive oil, and a small handful of microgreens or arugula.
For added flair, sprinkle on red pepper flakes or top with a soft poached or fried egg.
Enjoy it warm and fresh—perfect for brunch, lunch, or a light dinner!
