CopyCat Zaxby’s Chicken Fajita Quesadilla

Ingredients

3 chicken tenders, chopped
1 Large (10-12 inch) flour tortilla
1/2 to 1 cup shredded Cheddar Jack blend
1/4 cup green peppers
1/4 cup onions
Southwest ranch sauce
Standard ranch dressing

Directions

Cook chicken tenders until crispy, either in an air fryer or by frying. Cut into smaller pieces.

Slice (or dice) onions and peppers, then cook until tender and slightly charred.

Lay out the flour tortilla. Add a layer of cheddar jack cheese, followed by the cooked chicken and veggies.

Drizzle generously with Southwest ranch.

Fold the tortilla in half. Cook on a hot griddle or skillet over medium heat for about 2–3 minutes per side, until the cheese is melted and the tortilla is golden brown.

Serve: Slice into three or four pieces and serve with a side of ranch.
