CopyCat Zaxby’s Mediterranean Dressing

Ingredients

4 tablespoons of Extra Virgin Olive Oil
2 tablespoons of Red Wine Vinegar
Juice from 1 Lemon
1 tablespoon Dijon Mustard
1 clove of Garlic, minced
½ teaspoon of Dried Oregano
Salt and Pepper (season to taste)

Directions

Mince the garlic clove finely, and juice the lemon to extract all the tangy goodness.

Combine the Ingredients: In a jar with a lid, add 4 tablespoons of extra virgin olive oil, 2 tablespoons of red wine vinegar, and the freshly squeezed lemon juice. Next, add 1 tablespoon of Dijon mustard, the minced garlic, and ½ teaspoon of dried oregano. Season with salt and pepper to taste.

Shake it Up: Secure the lid on the jar tightly and shake vigorously for about 30 seconds. This will emulsify the dressing, blending the oil and vinegar into a smooth, creamy consistency.

Once your dressing is well mixed, it’s ready to serve. Drizzle it over your favorite salads, or use it as a marinade for meats and veggies.
