CopyCat Cracker Barrel Cornbread Muffins
Ingredients
5 tablespoons Sugar
4 tablespoons Butter melted
1/2 cup Buttermilk
1/4 cup Milk
4 tablespoons Yellow Cornmeal
3/4 cup Self-Rising Flour
1 teaspoon Baking Powder
1 teaspoon Salt
Directions
Preheat oven to 400°F.
Add all ingredients to bowl in order listed. Beat well until it looks like a smooth cake batter.
Divide batter between wells in a muffin tin. Fill any empty wells 1/2 full with water.
Place in oven and bake 16 to 18 minutes or until tester inserted into centers comes out clean.
Let cool few minutes in pan. Remove with two forks.
