CopyCat Olive Garden Minestrone Soup
Ingredients
2 tablespoons oil
1 Medium onion (chopped)
6oz carrots (chopped)
8oz green beans (cut in half)
6oz kale (chopped)
1 Medium zucchini (chopped)
4oz pasta (can use any kind of small pasta)
1 can white beans (drained)
1 can red kidney beans (drained)
28oz crushed tomatoes
4 cups vegetable stock
1 heaped teaspoon garlic powder
1 teaspoon onion powder
1 1/2 teaspoon oregano
1/2 teaspoon basil
salt and pepper (to taste)
Directions
In a large pot heat 2 TBS oil. Add onion, carrots, kale, and green beans, zucchini, salt and pepper, garlic, onion powder, oregano, and basil and saute about 10 minutes or until veggies start to soften.
Stir in pasta, beans, tomatoes, and vegetable stock and cook about 15-20 minutes or until pasta is cooked.
