CopyCat Golden Corral Carrot and Raisin Salad
Ingredients
6 cups carrots , shredded
1 1/2 cups raisins,
1 cup mayonnaise ,
1/3 cup sugar ,
1 cup pineapple, optional, drained and chopped
2 tablespoons lemon juice ,
1/2 teaspoon salt, to taste
Directions
Shred the carrots finely and measure out the raisins, sugar, and mayonnaise. If using pineapple, drain and chop into small pieces.
In a large bowl, add 6 cups carrots 1 1/2 cups raisins, and 1 cup pineapple.
In a small bowl, whisk the m1 cup mayonnaise, 1/3 cup sugar, 2 tablespoons lemon juice and 1/2 teaspoon salt to combine until smooth.
Drizzle the dressing over the carrot mixture and toss well to coat. Cover and refrigerate for at least 1 hour for flavors to blend.
