CopyCat Longhorn Steakhouse Air Fryer Sweet Potatoes
Ingredients
Sweet Potatoes:
2 medium sweet potatoes
1 tablespoon olive oil
½ teaspoon sea salt, or kosher salt
Cinnamon Honey Butter:
4 tablespoons salted butter, softened
2 tablespoons powdered sugar
1 tablespoon honey
¾ teaspoon ground cinnamon
1 pinch salt
Cinnamon Sugar Topping:
2 tablespoons granulated sugar
½ teaspoon ground cinnamon
Optional (Loaded Version):
¼ cup mini marshmallows
Directions
Scrub and dry the sweet potatoes. Rub each all over with olive oil, sprinkle with sea salt, and poke several holes with a fork.
Place in a single layer in the air fryer basket. Air fry at 400°F for 35–45 minutes, until fork-tender. Let rest 5 minutes.
While the potatoes cook, whip the softened butter with powdered sugar, honey, cinnamon, and a pinch of salt until light and creamy.
Stir together the granulated sugar and cinnamon.
Slice each potato open lengthwise and fluff the flesh. Add a generous spoonful of cinnamon honey butter, then sprinkle with cinnamon sugar. Serve warm.
Optional loaded version: After buttering, top with mini marshmallows and return to the air fryer at 350°F for 2–3 minutes, until puffed and golden. Finish with cinnamon sugar.
